The fluffiest and tastiest pancakes I have made in a while! I decided to blitz the mixture up in the blender, this made them quick and easy to make and the texture consistently smooth.
In a blender, combine: 2 eggs, 1/2 cup rolled oats, 1 tbsp Greek yoghurt, 4 dates, 1/2 cup milk (can use almond milk, oat milk etc) , 2 tbsp of hazelnut meal, 1 tbsp of vanilla protein powder, 1 1/2 tsp baking powder, 1 tsp vanilla extract and cacao nibs.
Blitz for two minutes or until consistency is smooth.
Add in a 1-2 tbsp of self raising flour if the mixture seems too runny and blend again.
Heat up a small fry pan to medium heat, when the pan is hot, ladle mixture into pan in even circles. Serve with peanut butter and extra cacao nibs.
