Layer up with this Neapolitan chia pudding. For the chocolate layer I used cacao powder and the raspberry layer I used frozen raspberries. You can layer with buckwheat for crunch and add some chopped bananas for sustenance.
Serves 1
Ingredients:
Choc Layer
1½ tbsp White chia seeds
½ cup Milk of choice (almond, rice, etc)
½ tsp Vanilla extract
1 tbsp Yoghurt (Optional)
1 tbsp Cacao powder
Raspberry Layer
1½ tbsp White chia seeds
½ cup Milk of choice (almond, rice, etc)
½ tsp Vanilla extract
1 tbsp Yoghurt (Optional)
1 tbsp Frozen Raspberries
Optional toppings
Buckwheat, bananas, coconut flakes, pomegranate
Directions:
- For the chia pudding layer one, combine all ingredients in a bowl, stir through and refrigerate overnight.
- Do the same for the raspberry layer.
- In the morning pour the chia pudding into desired glass, layer with buckwheat for crunch and top with coconut flakes, banana and pomegranate.
The layers of this pudding look fabulous–such beautiful colors! I can imagine how amazing this pudding tastes!
