I had some sweet potatoes in the cupboard so I thought I would have a go at Sweet potato brownies, I’ve seen recipes for these and was intrigued as to whether they actually tasted good. Safe to say, I thought they were delicious, and definitely gives the chocolatey hit without the nasties!
Makes one tray of brownies
Ingredients:
2 Small- Medium sized Sweet potatoes
15 Dates, soaked in boiling water for 5 min then drained, leaving a little water
½ Cup Oat flour, made by blitzing 3/4 cup rolled oats
4 tblsp Cacao powder
3 tblsp Maple Syrup
½ Cup blitzed Macadamias, hazelnuts and Walnuts (or whatever nuts you like)
Pinch of Salt
Optional: 1/4 Cup choc chips
Directions:
- Preheat your oven to 180° fan forced and line a square tin with baking paper
- Peel and chop your sweet potato then cook in microwave-safe dish for ten minutes
- Mash the sweet potato and leave to cool slightly
- Blend remaining ingredients (except the chocolate chips) in a blender
- Stir through chocolate chips
- Bake in a square tin on 180° for 25-30minutes
- Allow to cool slightly before slicing and serving
