
This gluten and sugar free muesli slice is the perfect morning or afternoon tea. With no nasties and lots of nuts and seeds it’s nutritionally good for you and doesn’t lack in flavour. The sugar quantity is quite low so you may want to add extra or a dash of honey if you have a sweet tooth.
Makes 9-12 large slices
Dry Ingredients:
2 cups Quinoa Flakes
½ cup Quinoa Flour
½ cup Walnuts
¼ cup Pepitas
¼ cup Sunflower Seeds
1 tsp Cardamon
1 tsp Baking Soda
⅓ cup Stevia
½ cup Apricots chopped
Wet Ingredients:
2 tsp Vanilla extract
⅓ cup Olive Oil
2 Eggs
Topping:
9 Large dried apricots
Sprinkle of desiccated coconut and sesame seeds
Sugar-free Jam (I used fig and ginger)
Directions:
- Preheat oven to 160° celsius and line a medium sized square tin with baking paper
- Combine all dry ingredients in a bowl and make a hole in the centre
- In a separate bowl, whisk together all the wet ingredients until smooth
- Slowly incorporate the wet into the dry and stir through until well combined
- Pour into lined tin. Place the dried apricots, coconut and sesame evenly on top of the mixture
- Bake for approximately 20 minutes until golden or until skewer comes out clean (baking times will vary due to heat of oven and size of loaf pan)
- Brush with jam while still hot
- Wait to cool then slice
