I attempted to make a muesli slice over the weekend but it turned more into granola, I think this was due to a lack of binding agents. However it was still yum, so I thought I would share the recipe with you all. Don’t be discouraged by the list of ingredients, everything just get mixed together in one bowl.
Serves 10
Ingredients:
1 cup Oats
¼ cup Sunflower Seeds
¼ cup Raw Buckwheat
¼ cup Pepitas
3 tbsp Buckwheat Flour
1 tbsp Desiccated Coconut
2 tbsp Flax Seeds
2 tbsp Sesame Seeds
3 tbsp LSA
1 tbsp White Chia Seeds
¼ tsp Cardamon
¼ cup Raw Almonds
1 tsp Vanilla Extract
¼ cup each chopped Apricots, dates and sultanas
2 tbsp Maple Syrup or Honey
½ tsp Baking soda
¼ cup Oil of choice (Vegetable, Canola, (Coconut melted)
Sprinkle of Salt
Directions:
- Preheat oven to 160° fan forced
- Combine the oats, sunflower seeds, buckwheat, buckwheat flour, pepita seeds, coconut, flax seeds, sesame seeds, LSA, chia seeds, cardamon and almonds in a large bowl. Stir well to combine
- Add the vanilla, chopped fruit, honey or maple, baking soda, oil and salt. Stir again
- Pour into lined slice tin and press into all ends of the tin
- Bake in preheated oven for about 30 minutes or until golden
- Slice while still hot
- You will find it slightly crumbly so you may have to eat it with a spoon!
