Zoats (Zucchini Oats)

Zoats is a fairly new concept to me, the addition of zucchini to my morning oats… At first I was sceptical but now I love it! It’s a great way of getting your veggies serve first thing in the morning and keeping you fuller for longer, and don’t worry, the zucchini flavour is not overpowering. I generally don’t add sweetener to my oats, but honey, agave or vanilla extract go nicely.

Serves 1

½ cup Oats
½ grated Zucchini
1 cup boiling water
½ cup Milk of choice
½ tsp Cinnamon
1 tsp Vanilla Extract

  1. Combine oats and boiling water in a saucepan over medium heat
  2. Add grated zucchini, cinnamon and vanilla. Allow to cook, stirring occasionally for approximately 10 minutes
  3. Add milk of choice, stir through and cook for an additional 5 minutes or until all liquid is absorbed
  4. Pour into serving bowl and allow to sit for 2 minutes (this will thicken it slightly)
  5. Top with favourite things, I used mixed berries, buckwheat, banana, walnuts and pepitas
