This coconut chia pudding layered with nicecream is a perfect breakfast treat. It’s sweet and creamy and the perfect pairing of flavours. I often find with chia puddings I get hungry earlier than normal, so the addition of the banana nicecream (with protein powder) helps me keep full!
Serves 1
Ingredients Chia Pudding:
3 tbsp White chia seeds
A little less than 1 cup Milk of choice (almond, rice, etc)
1 tbsp Desiccated coconut
½ tsp Vanilla extract
2 tbsp Yoghurt (Optional)
Ingredients Strawberry Nicecream
1 Frozen banana
5 Fresh strawberries
1 tbsp Milk of choice (or coconut water)
1 tbsp Protein powder (Optional)
1 tbsp Yoghurt (Optional)
Directions:
- For the chia pudding, combine all ingredients in a bowl, stir through and refrigerate overnight
- In the morning pour the chia pudding into desired glass, add one chopped strawberry around the glass
- For the strawberry nicecream, combine all ingredients in a blender and blend till thick and smooth (may have to stop half way and stir through)
- Pour nicecream on top of chia pudding
- Top with more strawberries, coconut flakes and raw buckwheat. Enjoy!
