Coconut Chia Pudding Layered Strawberry Nicecream


This coconut chia pudding layered with nicecream is a perfect breakfast treat. It’s sweet and creamy and the perfect pairing of flavours.  I often find with chia puddings I get hungry earlier than normal, so the addition of the banana nicecream (with protein powder) helps me keep full!

Serves 1

Ingredients Chia Pudding:
3 tbsp White chia seeds
A little less than 1 cup Milk of choice (almond, rice, etc)
1 tbsp Desiccated coconut
½ tsp Vanilla extract
2 tbsp Yoghurt (Optional)

Ingredients Strawberry Nicecream
1 Frozen banana
5 Fresh strawberries
1 tbsp Milk of choice (or coconut water)
1 tbsp Protein powder (Optional)
1 tbsp Yoghurt (Optional)


  1. For the chia pudding, combine all ingredients in a bowl, stir through and refrigerate overnight
  2. In the morning pour the chia pudding into desired glass, add one chopped strawberry around the glass
  3. For the strawberry nicecream, combine all ingredients in a blender and blend till thick and smooth (may have to stop half way and stir through)
  4. Pour nicecream on top of chia pudding
  5. Top with more strawberries, coconut flakes and raw buckwheat. Enjoy!
