Veggie Chilli Lime Tacos


I had some leftover taco shells sitting in my pantry so I decided to experiment with some flavour combinations. I was pleasantly surprised with what I came up with, so I felt I had to share! The great thing about tacos is the crunchy shell which adds delicious texture to mix with the filling.

Serves 2

6 Taco Shells
½ Capsicum Sliced
½ Tomato Sliced
1 cup Red and White cabbage coleslaw, my recipe is from
½ Avocado
6 Baby Corn, sliced
¼ Fresh Chilli Chopped
1 Lime
Handful of Mint Leaves
Handful of Coriander Leaves
1 Tbsp Black and white sesame seeds
2 Tbsp Yoghurt (Optional)


  1. Cook Taco shells according to packet instructions (10-15 minutes 180° fan forced oven)
  2. Stuff in order: Capsicum, tomato, coleslaw
  3. Mash avocado with fork, stuff into taco shell
  4. Scatter corn, chilli, squeeze of lime, mint, coriander and sesame seeds on top
  5. Serve with yoghurt if using
    ** Can also serve with some sliced chicken or cooked beef mince.
