Vegan Oil Free Granola

Super excited to share with you my vegan oil free granola recipe. Its golden and tasty, and when its baking, the whole house smells delicious. To make this recipe gluten free use gluten free oats, or substitute with quinoa flakes. I add the raisins to cook in the oven for the entire time, however you may prefer to just stir through them when its finished cooking. Hope you enjoy!

Serves 10

½ cup Dried Dates (soaked in boiling water for 5 minutes)
½ cup Rolled Oats
½ cup Buckwheat
¼ cup Flax Seeds
¼ cup Roughly chopped walnuts (can try almonds, macadamias or pecans)
¼ cup Desiccated Coconut
¼ cup Dried Raisins
¼ cup Pepitas
1 tbsp Sesame Seeds
½ tsp Cinnamon
¼ tsp Cardamon
1 tsp Vanilla Extract
2 Tbsp Maple Syrup
Sprinkle of Salt


  1. Preheat oven to 140° fan-forced
  2. Drain almost all the water from the dates and blitz to make a ‘date paste’
  3. Combine the oats, buckwheat, flax, nuts, coconut, raisins, pepitas, sesame seeds, cinnamon, cardamon and vanilla in a large bowl and mix well
  4. Add the date paste, maple syrup and salt, (salt brings out the flavours and makes it really tasty) and stir
  5. Use your hands to combine the mixture, making small clusters
  6. Spread mixture flat on a baking tray, pre-pared with a baking sheet
  7. Bake in oven for 15 minutes, then stir through and bake for a further 15 – 20 minutes
  8. Remove from oven and allow to harden (the mixture may seem slightly soft when you first take it out of the oven, but it will harden as it cools)
  9. Serve with fruit, yoghurt, milk or just eat it on its own!
