Carrot Cake Oatmeal

If you’re looking for an alternative flavour to your morning oats, then this recipe could be perfect for you! By adding grated carrot and cinnamon to this oat recipe, it tastes almost like carrot cake. This is one of my favourite oat recipes and by adding veggies you’ll find yourself keeping fuller for longer.

Serves 1

Ingredients:
½ cup Rolled oats
1 tbsp White chia seeds
1 cup Boiling water
½ tsp Cinnamon
1 tsp Vanilla extract
½ Grated carrot
½ cup Milk of choice

Directions:

  1. Combine oats, chia and boiling water in a saucepan over medium heat
  2. Add grated carrot, cinnamon and vanilla. Allow to cook, stirring occasionally for approximately 10 minutes
  3. Add milk of choice, stir through and cook for an additional 5 minutes or util all liquid is absorbed
  4. Pour into serving bowl and allow to sit for 2 minutes (this will thicken it slightly)
  5. Top with favourite things, I used mixed berries, buckwheat, banana, walnuts and pepitas
