Serves 1
Ingredients:
¼ cup Tricolour, red or white quinoa
½ cup Water
¼ cup Almond milk / Milk
½ tsp Cinnamon
1 tsp Vanilla extract
1 tbsp Yoghurt (Optional
5 Raspberries
½ tsp Lime zest
Pepitas, sunflower seeds, other fruit
Directions:
- Rinse quinoa under a sieve, place in small pot with cold water. Bring to the boil
- Once boiling, cover and simmer for 15-20 minutes until all the liquid is absorbed and quinoa is fluffy
- Stir through milk, cinnamon and vanilla and cook for a further 2 minutes
- Pour into serving bowl, stir through yogurt, raspberries and lime zest (if using)
- Top with any other fruits, nuts or seeds you desire.
