Rice Paper Rolls

Serves 2

4 Rice paper sheets
½ Sliced Carrot
1 Sliced Avocado
1 Sliced Cucumber
1 Tbsp Mint Chopped
Handful Baby Spinach
1 Tbsp Soy Sauce
1 Tbsp Sweet Chilli Sauce
1 Chilli
Optional: Fried Tofu, Salmon, Tuna, Grilled Chicken, Rice Noodles


  1. Have all your veggies chopped and ready to use
  2. In a large fry pan, fill with warm water. Slowly place one rice paper sheet in the warm water for 10 seconds until softened
  3. Arrange different veggies and proteins (if using) in the centre of the paper
  4. Fold in the two ends to the centre then roll. Repeat with remaining rice paper sheets
  5. Combine sweet chilli, soy and chilli in small bowl and use as a dipping sauce
