Rainbow Vegan Bowl


Serves 1

½ Sliced Carrot
½ Sliced Cucumber
¼ Shredded Cabbage
½ Sliced Capsicum
2 Shitake Mushrooms Sliced
2 Green Beans
100g Tofu + Oil for frying
½ Tbsp Sweet Chilli Sauce
1 Chilli (Optional)
2 Brazil Nuts, Chopped
½ Tbsp Sesame Seeds


  1. Heat oil in fry pan, add tofu and cook on all sides until browned
  2. Arrange assorted veggies on a plate with cooked tofu
  3. Combine sweet chilli, chopped nuts and chilli in small bowl for dipping sauce
  4. Sprinkle toasted or raw sesame seeds on top
