Quick Banana Pancakes

Serves 1

Ingredients:
1 Bannana
2 Eggs
¼ tsp Baking Powder
½ tsp Vanilla Extract
1 Tbsp Yoghurt (Optional)
¼ tsp Nutmeg or Cinnamon (Optional)

Directions:

  1. Mash banana to a smooth(ish) consistency, if there are still lumps this is okay
  2. Whisk through eggs
  3. Gently combine baking powder, vanilla, yoghurt and spices if using
  4. Heat and spray pan with non-stick, cook pancakes evenly
  5. Top with fresh fruit, additional yoghurt, nuts and seeds
